Swedish Saffron Cake

Swedish Saffron Cake (Saffranskaka in Swedish) is another traditional cake that is often enjoyed during Christmas time in Sweden. Its a classic that I love and bake every year. Below you’ll find the recipe I use, from the Swedish cake book “Sju sorters kakor” , with some modifications.

Ingredients:

  • 0,5 g saffron
  • 150 ml sour cream (can be replaced with kefir or simply yogurt)
  • 240 g flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 2 eggs
  • 270 g sugar
  • 200 g salted butter

Instructions:

  1. Pre-heat the oven to 175°
  2. Melt the butter and leave it to cool
  3. Ground the saffron with some of the sugar
  4. Beat the eggs together with the sugar
  5. Add saffron, butter and the sour cream
  6. Add flour (mixed with baking powder) to the batter and combine it gently with a spatula
  7. Pour the batter into a baking tin (I used one with 24 cm in diameter make sure to grease it with butter and dust with flour)
  8. Bake in the lower part of the oven for about 40-45 minutes

I hope you enjoy this Swedish Saffron Cake as much as I do! Its delicious to enjoy as it is but you can also dust some icing sugar on top of it for decoration or even make a glazing, up to you :-)
