
Swedish Saffron Cake
Swedish Saffron Cake (Saffranskaka in Swedish) is another traditional cake that is often enjoyed during Christmas time in Sweden. Its a classic that I love and bake every year. Below you’ll find the recipe I use, from the Swedish cake book “Sju sorters kakor” , with some modifications.
Ingredients:
- 0,5 g saffron
- 150 ml sour cream (can be replaced with kefir or simply yogurt)
- 240 g flour
- 2 tsp baking powder
- 1/4 tsp salt
- 2 eggs
- 270 g sugar
- 200 g salted butter
Instructions:
- Pre-heat the oven to 175°
- Melt the butter and leave it to cool
- Ground the saffron with some of the sugar
- Beat the eggs together with the sugar
- Add saffron, butter and the sour cream
- Add flour (mixed with baking powder) to the batter and combine it gently with a spatula
- Pour the batter into a baking tin (I used one with 24 cm in diameter make sure to grease it with butter and dust with flour)
- Bake in the lower part of the oven for about 40-45 minutes
