Gilles Marchal, Master Chocolatier, Pastry Chef and also Glacier, opened his boutique a few months ago in Montmartre. From the region Lorraine and with a career at Plaza Athénée, l’Hôtel Le Bristol, l’Hôtel Crillon and Maison du Chocolat, to name a few, you can just imagine what Gilles offers in his own pastry shop!
I peeked in together with Parisbreakfasts a few weeks ago and bought a few of his sweet creations to try and see if they really were as delicious as they were beautiful? We were not dissapointed ;-)

Le fraisier! A layer of génoise with a splash of Alsace kirsch syrup, crème mousseline à la vanille bourbon and fresh gariguette strawberries covered with a second layer of génoise and a top fine layer of pâte d’amande de Provence.
