Madeleine – French butter cake recipe

MadeleinesMadeleine is a French butter cake with a scalloped shell shape that is ribbed on one side and a hump on the other. They are spongy and very yummie and one of my favourite French cakes.

At work we have a tradition to bake a cake whenever we’re going on vaccation and since my trip to Paris is coming up I thought of baking something typical French so I chose to invite my collegues for some Madeleines :-)

Here is the recipe that makes 30 Madeleines (the recipe below is my modification of the classic recipe and all ingredients I’ve used are organic):

  • 3  eggs
  • 50 g fresh almond milk
  • 150 g raw sugar
  •  5 g vanilla powder
  • 250 g flour
  • 6 g baking powder
  • 125 g butter
  • 3 spoons of organic orange blossom flower honey
  • lemon zest from one lemon

1. Mix the eggs with the sugar. 2. Mix the baking powder withthe flour and vanilla powder and add it to the egg mixture. 3. Mix until a batter forms. 4. Melt the butter, let it cool a bit and then add it to the batter and mix. 5. Let the batter rest in the refrigerator for at least 2 hours (or over the night). 6. Preaheat the oven to 200°C for ten minutes. Brush the Madeleines mold with some of the melted butter that is left in the casserole, dust some flour and then fill each mould with 3/4 of the batter. Place the pan into the oven for 6 minutes at 240°C and the 4 last minutes at 200°C.
