Galette Des Rois, by now I’ve had way too many of them…but now I also have two adorable fèves (porcelaine figurines) to add to my fève collection!

If it wouldn’t have been for my friend Carol, who told me to sneak by Lohezic‘s boulangerie I would have never tried this utterly delicious and crunchy galette des rois that even made him win the prize in the competition that was held few weeks ago with more than 50 bakers in Paris. Lohezic’s version of the traditional Galette des Rois was simply perfect! The top was golden with a shiny glaze and the puff dough pastry was delicate and flaky with a filling of yummie frangipane. After have tasted many different Galette des Rois I must say I know how to distinguish a good Galette des Rois and Lohezic‘s was certainly one of them.

Then I guess you might wonder how a bad Galette des Rois is according to me? – when the galette is too puffy and turns into crumbs after trying to slice itwhen the frangipane tastes artificial almond flavorwhen the puff pastry is tasting like saturated fatwhen the cake is not compact and there is too much air between the frangipane and the puff dough layers.
