Baba Ispahan – a sublime pastry created by the Picasso of the pastry chefs, Pierre Hermé. I’m not so fond of the classic Baba au Rhum that is almost drenched in rum…but when Pierre Hermé has made a Baba with an Ispahan twist I cannot resist!

Let me introduce you to this wonderful piece of heaven, a small brioche soaked in syrup and eau-de-vie of wild raspberry..in the center of the brioche you’ll find fresh raspberries and litchis. Mascarpone cream and a red rose petal tops this delightful and very exquisite Baba Ispahan! Couldn’t have picked a better pastry for my birthday could I? ;-)
