Fresh Pea Salad with Asparagus must be one of my favourite salads during this period of the year. I love what the season has to offer and the fact that fresh peas and asparagus goes very well together :-) This salad is really easy to prepare and I’ve got the inspiration from a Danish collegues recipe that I’ve modified; boil the fresh organic peas with some salt for 1-2 minutes. Drain and add some butter and mash the peas lightly. Let the peas cool down a bit before adding some pepper, chopped fresh organic mint, lightly boiled organic asparagus chopped into smaller pieces, some juice from a fresh organic lemon and some organic white wine vinegar. Toss well, bon appétit!
