Ravioles with ricotta and basil

Ravioles with fresh ricotta and basil is one of my favourite dishes and I always have it when I’m in France. Unfortunately ravioles are not sold here (haven’t found them in Denmark or Sweden) so I decided to make my own. When I was in Paris I bought a Raviolamp and last week I decided to make my very own ravioles (raviolini in Italian = mini ravioli). Everything went smooth…until I had to roll out the pasta dough by hand. You need to be strong for getting the perfect thin layer of the dough and I realized I need to buy a pasta machine – otherwise I will never repeat this again. After a while (read: sweat and tears) I managed to get the perfect thin layer and I put one in the raviolamp, filled it with the ricotta and basil mix I had made and then I put a new layer on top. After a minute in boiling hot water they were ready to be served. I topped them with créme fraiche and some fresh basil and parmesan cheese. Home made ravioles, definately something I will make more often, as soon as I’ve bought a pasta machine ;-)
